1. 350 grams of fresh mussels, cleaned and washed
2. 300 grams of fresh prawns
3. 300 grams of linguine
4. 6-7 tablespoons of extra virgin olive oil Greenolia Organic
5. 1 onion, finely chopped
6. 2 cloves of garlic, finely chopped
7. 1 tablespoon of tomato paste
8. 500 grams of tomatoes, grated
9. 1/3 cup of ouzo
10. 2 tablespoons of basil chopped
11. Zest of one lemon
12. Salt
13. Freshly ground pepper

1. Place a skillet over high heat. Put the squid, mussels and shrimp cut in half in a bowl.
2. Add 2 tablespoons of olive oil, salt and pepper and sear the seafood in 2-3 batches in the hot pan. Allow 1-1 ½ minutes for each batch. Remove from the pan and set aside.

3. In a pot of boiling water, boil the linguini with salt for 1-2 minutes less than the package instructions.

4. In another pan over high heat, sauté the onion and garlic with 3 tablespoons of olive oil for 2 minutes.

5. Add the tomato paste and continue sautéing.  Add the chopped tomatoes and salt. Leave the pan uncovered, and simmer for 2 to 3 minutes.

6. Transfer the linguini to the pan with the sauce and stir for 1-2 minutes.

7. Add the mussels, prawns, the remaining olive oil, and a spoonful of basil, and mix well. Remove it from the heat.

Serve the pasta with lemon zest, freshly ground pepper and the remaining basil. Enjoy!
