Roast Leg of Lamb with Potatoes & Thyme  2048 1365 Greenolia

At Greenolia, we believe that great food begins with pure ingredients. With our premium extra virgin olive oil, we bring traditional Greek recipes to life, delivering authentic flavors to your table. This Easter, prepare a dish to remember: Roast leg of lamb with potatoes, infused with thyme and, of course, enriched with the aroma of Greenolia olive oil.

Ingredients (Serves 6-8)

1 leg of lamb (approx. 2.5 kg)
12 potatoes, cut into wedges
2 garlic cloves, unpeeled
Juice and zest of 2 lemons
¾ cup Greenolia extra virgin olive oil
1 tbsp dried oregano
2 sprigs fresh thyme
2 sprigs fresh rosemary
3 tbsp mustard with herbs
Salt & freshly ground black pepper
1 cup water

 Instructions

Prepare the Potatoes
In a large bowl, mix the Greenolia olive oil, lemon juice and zest, oregano, mustard, salt, and pepper. Add the potatoes and toss to coat evenly. Spread them in a large baking dish, then add the garlic cloves, thyme, and rosemary.

Prepare the Lamb
Preheat the oven to 200°C (390°F). Make small incisions in the leg of lamb, season generously with salt and pepper, and place it over the potatoes. Drizzle the remaining Greenolia olive oil mixture over the lamb and pour the water into the dish.

Roast
Cover the dish with parchment paper and aluminum foil, sealing the edges well. Roast for 1 hour. Then, remove the cover, reduce the temperature to 180°C (350°F), and continue roasting for another hour until the lamb develops a golden crust and the potatoes absorb the rich, aromatic olive oil.

Choose Greenolia extra virgin olive oil for its intense aroma and rich, authentic flavor, bringing the essence of a Greek Easter to your family gathering table.

Happy Easter & Enjoy!
