Made with Organic Greenolia Extra Virgin Olive Oil, it offers a silky texture and a nuanced flavor profile, while the almond crumble adds irresistible crunch and aromatic depth.
Ingredients
For the ice cream
- 500 ml heavy cream (35% fat)
- 250 ml whole milk
- 150 g sugar
- 4 egg yolks
- 80 ml Organic Greenolia Extra Virgin Olive Oil
- 1 vanilla bean (or 1 tsp vanilla extract)
- Zest of 1 unwaxed lemon (optional)
For the almond crumble
- 100 g all-purpose flour
- 60 g cold unsalted butter, cubed
- 50 g brown sugar
- 50 g chopped almonds
- Pinch of salt
Instructions
Ice Cream
- In a saucepan, heat the milk and cream over medium heat, without letting it boil.
- In a separate bowl, whisk the egg yolks with the sugar until pale and fluffy.
- Slowly pour the warm milk mixture into the yolks, whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook gently over low heat, stirring continuously, until it thickens slightly (around 82°C / 180°F).
- Remove from the heat and stir in the vanilla, lemon zest, and Greenolia olive oil.
- Let cool completely. Then churn in an ice cream maker according to the manufacturer’s instructions, or freeze in a container, stirring every 30 minutes for 3–4 hours to prevent ice crystals.
Almond Crumble
- Preheat the oven to 180°C (350°F).
- Combine all crumble ingredients in a bowl and rub together with your fingertips until a crumbly texture forms.
- Spread the mixture on a baking tray lined with parchment paper and bake for 15–20 minutes, or until golden brown.
Top a generous scoop of ice cream with a spoonful of almond crumble and a few extra drops of Greenolia olive oil. This dessert pairs beautifully with fresh berries or sliced peaches. The Organic Greenolia Extra Virgin Olive Oil adds luxurious creaminess and a subtle peppery note that elevates the dish to gourmet status — a Mediterranean twist you didn’t know you needed.
