The most delicious dessert for Valentine’s Day. Velvety chocolate mousse with spicy walnuts, in a combination that will elevate the celebration of love.


For the mousse:
200 grams finely chopped dark chocolate
120 ml extra virgin olive oil Greenolia Classic
4 eggs, separated into yolks and whites
80 grams granulated sugar
20 ml espresso coffee
20 ml cognac

For the spiced walnuts:
80 grams walnuts
25 grams powdered sugar
1 teaspoon cognac
1/4 teaspoon ground cloves
1/2 teaspoon salt


For the mousse:
1. Place the chocolate in a bowl and cover it with transparent wrap.
2. Put the bowl in the microwave and set it to 800 watts for 1.5 minutes, until the chocolate melts.
3. Add olive oil to the melted chocolate, mix well, and set the mixture aside.
4. In a separate bowl, beat the egg yolks with half of the sugar until they form stiff peaks (2-3 minutes).
5. Add the chocolate mixture, espresso, and cognac to the egg mixture. Stir well, and leave the mixture aside.
6. Clean the mixer bowl thoroughly, ensuring there is no water.
7. Beat the egg whites with a pinch of salt until they become fluffy (1-2 minutes). Gradually add the remaining sugar and 8. Continue beating until it forms a glossy meringue.
8. Pour 1/3 of the meringue into the chocolate mixture and stir well to lighten the mixture.
9. Continue by adding the remaining 2/3 of the meringue with gentle movements from bottom to top, trying to maintain the fluffy texture.
10. Divide the mousse into 6 serving glasses of 200 ml each and refrigerate for 2-3 hours until the mousse sets.

For the spiced walnuts:
1. Preheat the oven to 180°C (convection).
2. In a bowl, mix walnuts, sugar, cognac, ground cloves, and salt.
3. Spread the mixture on a baking tray lined with parchment paper.
4. Bake the walnuts for about 4-5 minutes until they turn golden and crisp.
5. Once out of the oven, let them cool to room temperature.
6. Break the spiced walnuts and sprinkle over the mousse before serving.
