Apple pie with Greenolia olive oil 2048 1365 Greenolia

October is the season when the scents of apples, cinnamon, and freshly baked treats fill our homes. Nature turns to warm colors, and traditions—from the autumn harvest to the celebration of Halloween—invite us to share moments of comfort. In this spirit, we created a Mediterranean apple cake with Greenolia Premium olive oil – a healthier, aromatic version of a classic dessert that perfectly matches the autumn mood.

Ingredients for the Apple Cake (24–26 cm pan)

For the batter:
  • 4 eggs
  • 180–200 ml Greenolia Premium Koroneiki – Manaki
  • 180–200 g sugar (white, brown, or a mix)
  • 1 vanilla pod or 1 tsp vanilla extract
  • A pinch of salt
  • 240 g all-purpose flour or type 0 flour
  • 8 g baking powder (about 1½ tsp)
For the apples & filling:
  • 4–5 apples (depending on size), peeled and cored
  • Juice of 1 lemon (to prevent browning)
  • 2 tbsp sugar for the apples
  • 1 tsp cinnamon, ½ tsp cardamom (optional: a pinch of clove or nutmeg)
  • 50–100 g walnuts or other nuts (optional)
  • Raisins and/or orange zest (optional)
For the topping:
  • 1 apple, thinly sliced
  • A little sugar or cinnamon for sprinkling
 Step-by-Step Method
  1. Preheat the oven to 180°C (static) or 170–175°C (fan).
  2. Prepare the apples: Dice or slice 3–4 apples and mix with lemon juice and sugar. Slice the last apple thinly for the topping.
  3. Make the batter: Beat eggs with sugar and vanilla until fluffy. Gradually add the olive oil while beating. Sift in flour, baking powder, and salt, and gently fold. Add apples, spices, nuts, or raisins.
  4. Prepare the pan: Grease with olive oil, dust with flour, pour in the batter, smooth the surface, and decorate with apple slices.
  5. Bake: Bake for 45–55 minutes until a toothpick comes out clean. Cool for 10 minutes before removing from the pan.
Variations & Tips
  • Reduce sugar for a lighter apple cake.
  • Add orange juice or zest for a fruity aroma.
  • Mix in yogurt or cream (50–100 g) for richer texture.
  • Try a blend of white and whole-wheat flour for extra nutrition.
